Wood Chopped Grilled Chicken Marinade from Satu’li Canteen at Disney’s Animal Kingdom

Ingredients
  

  • – 1 T Extra Virgin Olive Oil
  • – ½ cup Apple juice
  • – 2 t lemon juice
  • – Pinch of salt
  • – Freshly ground black pepper to taste
  • – ¼ t ginger
  • – ¼ t chili powder
  • – ¼ t paprika
  • – ¼ t onion powder
  • – ¼ t garlic powder
  • – ⅛ t cayenne pepper
  • – ⅛ t coriander
  • – ⅛ t chipotle powder
  • – 2 T mix soy sauce Ponzu

Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • Whisk or spoon (for mixing marinade)
  • Knife (for trimming chicken)
  • Cutting board
  • Grill or smoker (gas, charcoal, pellet grill like Traeger, etc.)
  • Tongs
  • Meat thermometer

Method
 

  1. Mix all ingredients together in a bowl. Pour over chicken and let marinate **for 2–24 hours**.
  2. Preheat your grill to medium heat. If turning your gas grill into a smoker, preheat for at least 20 minutes or until the smoker box begins producing smoke.
  3. Grill the chicken, turning after 7–8 minutes.
  4. Pour any remaining marinade back over the chicken to keep it moist.
  5. Continue cooking for an additional 7–8 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  6. *Note: Every grill varies slightly in temperature, so adjust cooking time as needed.*
